Breakfast Bowl (1 serving)
Healthy fats FTW
What You’ll Need
- 2 Organic eggs
- ½ Avocado, diced
- Lime
- Your favorite hot sauce
- Toasted pumpkin seeds
Get Cookin’
- Cook eggs with a little olive oil, kosher salt & pepper (your favorite method)
- Add to serving bowl
- Top with diced avocado
- Squeeze a little lime juice
- Drizzle with your favorite hot sauce
- Sprinkle a handful of toasted pumpkin seeds
Cucumber-Cantaloupe Salad (4 servings)
A delicious riff on a Tusk recipe that appeared in Bon Appetit
What You’ll Need
- ¼ cup olive oil
- 2 Tablespoon champagne (or white wine) vinegar
- 1 teaspoon ground coriander
- ¼ teaspoon freshly ground black pepper
- 1/8 teaspoon ground cardamom
- ½ large cantaloupe, in roughly 1” chunks
- 1 large hothouse cucumber, halved length-wise and then sliced into roughly 1/2'” thick half-rounds
- ½ cup toasted pumpkin seeds
- ¼ cup chopped fresh mint
- ¼ cup chopped fresh cilantro
- Sumac (for serving)
Get Mixin’
- Whisk oil, vinegar, coriander, salt, pepper, and cardamom in a large bowl
- Add cantaloupe and cucumber and toss to coat in dressing
- Let sit, uncovered, 15 minutes
- To serve, add pumpkin seeds, cilantro, and mint to salad and toss gently to combine
- Top with sumac
Salmon (4 servings)
Easy-peasy, no-flip method
What You’ll Need
- 4 wild salmon fillets (about 5oz each)
- Kosher salt
- Olive Oil
Get Cookin’
- Dry salmon well and season lightly with kosher salt
- Heat a non-stick pan to medium, add a drizzle of oil once hot then add fillets skin-side down
- Turn heat down to medium-low and cover loosely with foil
- Cook about 7 minutes until it flakes easily and is no longer translucent in the middle
Berry Bowl (4 servings)
This sweet/sour combo elevates a basic berry bowl
What You’ll Need
- 1 teaspoon rosé vinegar
- 1 tablespoon favorite liquid or powder natural sweetener (honey, stevia, erythritol, etc…)
- 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
Get Mixin’
- Stir vinegar & sweetener together in the bottom of serving bowl
- Add berries and toss to coat
- Let sit, uncovered for 15 minutes
